Munich’s Tantris DNA has launched a menu in memory of Eckart Witzigmann. The chef, who made the restaurant famous from 1971 onward with French-influenced haute cuisine, turned 85 on July 4. The five-course menu includes beetroot jelly with crème fraîche and caviar, Breton lobster with artichokes and beans, red mullet with calamari tartare, venison medallion ‘Belle Alliance,’ and strawberry rosette with rhubarb soufflé — priced at 220 euros. It is available for lunch and dinner by reservation.
Benjamin Chmura and head pastry chef Emma Betti designed the menu. Witzigmann helped select the courses but will not cook personally. ‘I’m retired and want to enjoy it,’ Witzigmann said. The menu is a homage to his classic dishes, returning to their place of origin.
Tantris was founded in 1971 by Fritz Eichbauer. The building on Johann-Fichte-Straße is still considered architecturally exceptional. Witzigmann shaped the restaurant’s cuisine and made Munich a culinary destination.
